Chocolate Cake

For the Chocolate Cake

  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1⁄2 cup buttermilk (substitute with 1⁄2 cup of milk and 1⁄2 tablespoon of white vinegar or lemon juice)
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 1⁄2 cup cocoa
  • 1 cup black coffee (made with 2 teaspoons of instant coffee)
  • 230g butter

For the Chocolate Icing

  • 3 cups icing sugar
  • 1/4 cup cocoa
  • 50g melted butter
  • Boiling water as required


For the Chocolate Cake

  • Put all the dry ingredients in a large bowl and whisk together.
  • In a small bowl mix together the buttermilk, eggs and vanilla. Set aside.
  • In a small saucepan add the cocoa and coffee and mix well.
  • Add the butter to the cocoa and melt over a medium heat. Remove from the heat.
  • Mix the cocoa mixture into the dry ingredients.
  • Add in the buttermilk mixture and mix well.
  • Pour the mixture into a lined cake tin.
  • Bake at 180°C (160°C fan bake) for 40 minutes. Check the cake is cooked by inserting a cake skewer. If it comes out clean the cake is cooked.
  • Leave to cool. Remove the cake from the pan and ice.

For the Chocolate Icing

  • Mix the icing sugar and cocoa together.
  • Pour in the melted butter and mix. Pour in a small amount of boiling water to get an icing consistency.
  • Spread over the cake
  • Leave to set and cut into pieces
