Ingredients
Dry Ingredients
- 2 1/2 cups wheat bran
- 1 cup flour
- 1 teaspoon salt
- 1/2 teaspoon each: baking powder, baking soda, ground cinnamon
Wet Ingredients
- 1 cup plain Greek yoghurt
- 1/2 cup each: sugar, honey
- 2 eggs
- 1 teaspoon vanilla extract
Additional ingredient
- 1 1/2 cups blueberries - fresh or frozen
Method
Blueberry Bran Muffins
- Preheat oven to 180oC (160oC fan bake). Spray a 12-count or Texas 6-count muffin tray with baking spray.
- In a large bowl, whisk all the dry ingredients together.
- In a smaller bowl, whisk all the wet ingredients together.
- Mix the wet ingredients into the dry ingredients without over mixing.
- Fold through the blueberries.
- Divide the mixture between the prepared muffin tray holes.
- Bake for 25 - 35 minutes, depending on the size of the muffins.
