Blueberry Bran Muffins

Ingredients

Dry Ingredients

  • 2 1/2 cups wheat bran
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon each: baking powder, baking soda, ground cinnamon

Wet Ingredients

  • 1 cup plain Greek yoghurt
  • 1/2 cup each: sugar, honey
  • 2 eggs
  • 1 teaspoon vanilla extract

Additional ingredient

  • 1 1/2 cups blueberries - fresh or frozen

Method

Blueberry Bran Muffins

  • Preheat oven to 180oC (160oC fan bake). Spray a 12-count or Texas 6-count muffin tray with baking spray.
  • In a large bowl, whisk all the dry ingredients together.
  • In a smaller bowl, whisk all the wet ingredients together.
  • Mix the wet ingredients into the dry ingredients without over mixing.
  • Fold through the blueberries.
  • Divide the mixture between the prepared muffin tray holes.
  • Bake for 25 - 35 minutes, depending on the size of the muffins.
