Ingredients

Spice Mix

  • 1 1/2 teaspoons brown sugar
  • 3/4 teaspoon each: paprika, garlic powder, onion powder
  • 1/2 teaspoon each: dried oregano, dried thyme
  • 1/4 teaspoon each: ground ginger, salt
  • 1/8 teaspoon cayenne pepper

Marinade

  • 1 tablespoon each: olive oil, orange juice, lime juice
  • 2 teaspoons spice mix from above
  • 2 salmon fillets

Mango Salsa

  • 1 mango - diced
  • 1/2 red capsicum - diced
  • 1/4 cup red onion - finely diced
  • 1/4 fresh coriander - chopped
  • 2 tablespoons fresh lemon juice
  • Rice, avocado and spicy mayonnaise to serve

Method

Cajun Salmon

  • Mix all the spice mix ingredients together - set aside.
  • Combine all the marinade ingredients together and marinate the salmon for 30 minutes.
  • Combine all the salsa ingredients together - set aside.
  • Coat the salmon with the remaining spice mix.
  • Heat a little oil in a pan and cook the salmon, skin side up for a couple of minutes or until coloured.
  • Flip the salmon and cook through to your liking.
  • Serve with rice, avocado, spicy mayonnaise and mango salsa.
