Ingredients
Spice Mix
- 1 1/2 teaspoons brown sugar
- 3/4 teaspoon each: paprika, garlic powder, onion powder
- 1/2 teaspoon each: dried oregano, dried thyme
- 1/4 teaspoon each: ground ginger, salt
- 1/8 teaspoon cayenne pepper
Marinade
- 1 tablespoon each: olive oil, orange juice, lime juice
- 2 teaspoons spice mix from above
- 2 salmon fillets
Mango Salsa
- 1 mango - diced
- 1/2 red capsicum - diced
- 1/4 cup red onion - finely diced
- 1/4 fresh coriander - chopped
- 2 tablespoons fresh lemon juice
- Rice, avocado and spicy mayonnaise to serve
Method
Cajun Salmon
- Mix all the spice mix ingredients together - set aside.
- Combine all the marinade ingredients together and marinate the salmon for 30 minutes.
- Combine all the salsa ingredients together - set aside.
- Coat the salmon with the remaining spice mix.
- Heat a little oil in a pan and cook the salmon, skin side up for a couple of minutes or until coloured.
- Flip the salmon and cook through to your liking.
- Serve with rice, avocado, spicy mayonnaise and mango salsa.
