Ingredients

Caramel Miso Salmon

  • 4 salmon fillets
  • Garlic salt and freshly ground black pepper
  • 2 teaspoons cooking oil

Caramel miso

  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon miso paste
  • 1 teaspoon fresh ginger - grated

Method

Caramel Miso Salmon

  • Pat the salmon fillets dry using paper towels. Season with garlic salt and pepper - set aside.
  • In a small saucepan, combine all the caramel miso ingredients together. Bring to a simmer and cook for a few minutes or until the caramel has thickened.
  • Heat the oil in a large frying pan and cook the salmon, skin side down for 3 minutes.
  • Flip the salmon and cook for a further 2 minutes. The salmon will still be pink in the middle so cook for longer if preferred.
  • Serve the salmon fillets glazed with the miso caramel.
