Ingredients
Chicken Adobo
- 8 chicken pieces - bone in, skin on
- Garlic salt and freshly ground black pepper
- 1 tablespoon cooking oil
- 2 tablespoons crushed garlic
- 1 - 2 tablespoons jalapenos - chopped
- 2/3 cup soy sauce
- 1/3 cup white vinegar
- 2 tablespoons brown sugar
- 1 teaspoon freshly ground black pepper
- 2 bay leaves
Method
Chicken Adobo
- Season the chicken pieces with garlic salt and pepper.
- In a large pan, heat the oil over a high heat.
- Brown the chicken on all sides. Add in the garlic and jalapeno and cook for 1 minutes.
- Whisk all the remaining ingredients together and pour into the pan.
- Place a lid on the pan and simmer for 10 - 15 minutes or until the chicken is cooked through.
- Remove the lid from the pan. Increase the heat to medium/high. Bring the mixture to a simmer and cook for a few minutes until the sauce has thickened and is syrupy.
