Ingredients

Chinese Five Spice Chicken

  • 4 chicken Maryland's

Marinade

  • 1/4 cup light soy sauce
  • 3 tablespoons dark soy sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon white pepper
  • 1 teaspoon Chinese five spice
  • 1 teaspoon onion powder
  • 1 tablespoon mirin
  • 1 tablespoon fresh garlic - crushed
  • 1 tablespoon sugar

Basting Sauce

  • 1 tablespoon honey
  • 1 teaspoon cooking oil
  • Leftover sauce from chicken marinade
  • 1 tablespoon water

Method

Chinese Five Spice Chicken

  • Whisk all the marinade ingredients together. Add in the chicken and marinate over night.
  • Preheat the oven to 180oC (160oC fan bake). Line a roasting dish with baking paper and top with a baking rack.
  • Place the chicken onto the rack and cook for 30 minutes.
  • In a small saucepan, add in all the basting sauce ingredients and simmer for 2 minutes.
  • Baste the chicken with the sauce.
  • Place the chicken back into the oven for a further 30 minutes or until cooked through.
