Ingredients

Crunchy Chicken with Hot Honey Drizzle

  • 5 cups cornflakes
  • 1/4 cup parmesan - grated
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon each: onion powder, garlic powder, garlic salt
  • 2 eggs
  • 1/2 tablespoon hot sauce (such as sriracha)
  • 6 boneless chicken thighs
  • Olive oil for drizzling

Hot Honey Drizzle

  • 1/2 cup honey
  • 2 tablespoons hot sauce (such as sriracha)
  • 1/2 teaspoon each: garlic powder, onion powder
  • 1/4 teaspoon garlic salt

Method

Crunchy Chicken with Hot Honey Drizzle

  • Preheat oven to 220oC (200oC fan bake). Line a baking tray with baking paper.
  • In a food processor, crush the cornflakes, parmesan, smoked paprika, onion powder, garlic powder and garlic salt.
  • In a medium bowl, whisk together the eggs and hot sauce.
  • Dip each chicken thigh into the egg mixture and then into the cornflake mixture. Place each coated chicken thigh on the prepared tray, drizzle with olive oil.
  • Cook the chicken for 25 minutes or until cooked through.
  • In a small pot, combine all the hot honey drizzle ingredients and simmer for a minute.
  • Serve the chicken drizzled with the hot honey drizzle.
