Crunchy Chicken with Hot Honey Drizzle
- 5 cups cornflakes
- 1/4 cup parmesan - grated
- 1 teaspoon smoked paprika
- 1/2 teaspoon each: onion powder, garlic powder, garlic salt
- 2 eggs
- 1/2 tablespoon hot sauce (such as sriracha)
- 6 boneless chicken thighs
- Olive oil for drizzling
Hot Honey Drizzle
- 1/2 cup honey
- 2 tablespoons hot sauce (such as sriracha)
- 1/2 teaspoon each: garlic powder, onion powder
- 1/4 teaspoon garlic salt
Method
Crunchy Chicken with Hot Honey Drizzle
- Preheat oven to 220oC (200oC fan bake). Line a baking tray with baking paper.
- In a food processor, crush the cornflakes, parmesan, smoked paprika, onion powder, garlic powder and garlic salt.
- In a medium bowl, whisk together the eggs and hot sauce.
- Dip each chicken thigh into the egg mixture and then into the cornflake mixture. Place each coated chicken thigh on the prepared tray, drizzle with olive oil.
- Cook the chicken for 25 minutes or until cooked through.
- In a small pot, combine all the hot honey drizzle ingredients and simmer for a minute.
- Serve the chicken drizzled with the hot honey drizzle.
