Ingredients

Extremely Easy Enchiladas

  • 1 tablespoon cooking oil
  • 1 onion - finely diced
  • 500g mince
  • 1 x 300g jar salsa - mild or medium
  • 1 teaspoon Worcestershire sauce
  • 4 regular tortillas
  • 1 cup mozzarella - grated
  • Sour cream for serving

Method

Extremely Easy Enchiladas

  • In a large pan, heat the oil over a medium heat and sauté the onion for 4 minutes.
  • Turn the heat up and add in the mince. Using a wooden spoon, break up the mince and cook until well browned.
  • Add in the salsa and Worcestershire sauce.
  • Simmer for 3 minutes.
  • Preheat the oven grill and line a baking tray with baking paper.
  • Place the tortillas onto the prepared tray and cover half of each tortilla with the mince mixture.
  • Fold over the unfilled half of each tortilla and sprinkle with cheese.
  • Place under the grill and cook until the cheese is golden.
  • Serve with sour cream and a side salad.
