Extremely Easy Enchiladas
- 1 tablespoon cooking oil
- 1 onion - finely diced
- 500g mince
- 1 x 300g jar salsa - mild or medium
- 1 teaspoon Worcestershire sauce
- 4 regular tortillas
- 1 cup mozzarella - grated
- Sour cream for serving
Method
Extremely Easy Enchiladas
- In a large pan, heat the oil over a medium heat and sauté the onion for 4 minutes.
- Turn the heat up and add in the mince. Using a wooden spoon, break up the mince and cook until well browned.
- Add in the salsa and Worcestershire sauce.
- Simmer for 3 minutes.
- Preheat the oven grill and line a baking tray with baking paper.
- Place the tortillas onto the prepared tray and cover half of each tortilla with the mince mixture.
- Fold over the unfilled half of each tortilla and sprinkle with cheese.
- Place under the grill and cook until the cheese is golden.
- Serve with sour cream and a side salad.
