Ingredients

Fishermans Pie

  • 650g fish fillets - I used monkfish - chopped
  • 300g raw prawns
  • 200g smoked fish - chopped
  • 2 cups milk
  • Garlic salt and freshly ground black pepper
  • 100g butter
  • 1 onion - finely diced
  • 1/4 cup flour
  • 2/3 cups cheese - grated
  • Zest of 1 lemon

Potato Topping

  • 8 potatoes
  • 1/4 cup cream
  • 40g butter
  • 1/3 cup cheese - grated
  • 1/3 cup panko breadcrumbs

Method

Fishermans Pie

  • Heat the milk in a large saucepan with some garlic salt and pepper. Poach the fish fillets until flaky. Add in the prawns and smoked fish for 2 minutes. remove the seafood and set aside the milk and the seafood.
  • Heat the butter in another large saucepan and sauté the onion for a few minutes. Stir in the flour and cook for 1 minute.
  • Slowly add in the milk that the fish has been poached in, whisking continuously until the sauce thickens.
  • Add in the grated cheese, lemon zest and seafood.
  • Tip the mixture into a baking dish.
  • Peel and chop the potatoes and boil in salted boiling water until tender.
  • Drain the potato, add the butter and place the lid back on to steam the potatoes for 5 minutes.
  • Mash the potatoes with the cream. Tip the potatoes on top of the seafood and spread evenly.
  • Sprinkle with the cheese and breadcrumbs.
  • Preheat the oven to 200oC (180oC fan bake). Bake for 30 minutes or until golden brown.
