Ingredients
Fishermans Pie
- 650g fish fillets - I used monkfish - chopped
- 300g raw prawns
- 200g smoked fish - chopped
- 2 cups milk
- Garlic salt and freshly ground black pepper
- 100g butter
- 1 onion - finely diced
- 1/4 cup flour
- 2/3 cups cheese - grated
- Zest of 1 lemon
Potato Topping
- 8 potatoes
- 1/4 cup cream
- 40g butter
- 1/3 cup cheese - grated
- 1/3 cup panko breadcrumbs
Method
Fishermans Pie
- Heat the milk in a large saucepan with some garlic salt and pepper. Poach the fish fillets until flaky. Add in the prawns and smoked fish for 2 minutes. remove the seafood and set aside the milk and the seafood.
- Heat the butter in another large saucepan and sauté the onion for a few minutes. Stir in the flour and cook for 1 minute.
- Slowly add in the milk that the fish has been poached in, whisking continuously until the sauce thickens.
- Add in the grated cheese, lemon zest and seafood.
- Tip the mixture into a baking dish.
- Peel and chop the potatoes and boil in salted boiling water until tender.
- Drain the potato, add the butter and place the lid back on to steam the potatoes for 5 minutes.
- Mash the potatoes with the cream. Tip the potatoes on top of the seafood and spread evenly.
- Sprinkle with the cheese and breadcrumbs.
- Preheat the oven to 200oC (180oC fan bake). Bake for 30 minutes or until golden brown.
