Lamb Chops with Red Capsicum Salsa

Ingredients
Red Capsicum Salsa
- 1/2 red capsicum - diced
- 4 cloves garlic
- Handful fresh parsley
- Juice from 1/2 lemon
- 1 tablespoon dried oregano
- 1/2 tablespoon smoked paprika
- 2 teaspoons dried thyme
- 2 teaspoons garlic salt
- 1 teaspoon black pepper
- 1/2 teaspoon onion powder
Lamb
- 8 - 10 lamb chops
Method
Lamb Chops with Red Capsicum Salsa
- Add all the salsa ingredients to a food processor and blend well.
- Marinate the lamb chops in the salsa for at least two hours or preferably overnight.
- Take the lamb chops out of the refrigerator 1 hour before cooking.
- Preheat the oven to 200oC (180oC fan bake).
- Heat a little oil in a large, ovenproof frying pan, over a medium/high heat.
- Sear the chops well on both sides. Place the pan into the oven.
- Cook for 2 - 5 minutes (medium rare/medium) or 5 - 10 minutes (medium well/well done)
