Ingredients
Marry Me Chicken
- 650g chicken thigh fillets - cut in half
- Garlic salt and freshly ground black pepper
- 1/4 cup flour
- 1 tablespoon olive oil
- 15g butter
- 3 cloves garlic - crushed
- 1 cup chicken stock
- 1 cup cream
- 1/2 cup parmesan cheese - grated
- Pinch chilli flakes
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/3 cup sundried tomatoes - chopped
- 2 handfuls baby spinach
- Fresh basil for serving
Method
Marry Me Chicken
- Season the flour with the garlic salt and pepper. Toss through the chicken.
- Heat the oil and butter in a large frying pan, over a medium/high heat.
- Brown the chicken on both sides then set aside. It doesn't need to be cooked completely as the cooking is finished in the sauce.
- Add the garlic to the pan and sauté for 1 minute.
- Pour in the stock and stir well to incorporate any of the cooked chicken bits on the bottom of the pan.
- Add in the cream and parmesan and simmer for 3 minutes.
- Sprinkle in the chilli, oregano and thyme.
- Stir through the sundried tomatoes, spinach and the chicken with any resting juices.
- Simmer for 3 minutes or until the chicken is cooked through.
- Serve with rice, pasta or mashed potato. Top with some fresh basil.
