Ingredients

Monkfish Milanese with Garlic & Parsley Sauce

  • 600g monkfish fillets
  • 1 small onion - finely diced
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1/3 cup flour
  • 2 eggs - beaten
  • 1 1/2 cups panko breadcrumbs seasoned with salt and pepper
  • Olive oil for frying the fish
  • 100g butter
  • 3 cloves garlic - crushed
  • 1/4 cup parsley - finely chopped
  • 4 cups mesclun leaves
  • 2 carrots - shredded
  • Salad dressing of your choice

Method

Monkfish Milanese with Garlic & Parsley Sauce

  • Marinate the monkfish in the onion, lemon juice and olive oil for 1 hour.
  • Scrape any onion from the fish fillets.
  • Place the flour in one dish, the beaten eggs in another and the seasoned panko breadcrumbs into another.
  • Dip each fish fillet into the flour, then the egg and finally the breadcrumbs.
  • Preheat the oven to 180oC (160oC fan bake). Line a baking dish with baking paper.
  • Heat some olive oil in a frying pan and brown the fish on both sides.
  • Place the fish into the prepared baking dish and bake for 10 minutes or until the fish is flaky.
  • Place the butter and garlic into the same frying pan and cook for 1 minute. Stir through the parsley.
  • Serve each fish fillet with a drizzle of the butter sauce and top with some mesclun and shredded carrot and some salad dressing.
