Monkfish Milanese with Garlic & Parsley Sauce
- 600g monkfish fillets
- 1 small onion - finely diced
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1/3 cup flour
- 2 eggs - beaten
- 1 1/2 cups panko breadcrumbs seasoned with salt and pepper
- Olive oil for frying the fish
- 100g butter
- 3 cloves garlic - crushed
- 1/4 cup parsley - finely chopped
- 4 cups mesclun leaves
- 2 carrots - shredded
- Salad dressing of your choice
Method
Monkfish Milanese with Garlic & Parsley Sauce
- Marinate the monkfish in the onion, lemon juice and olive oil for 1 hour.
- Scrape any onion from the fish fillets.
- Place the flour in one dish, the beaten eggs in another and the seasoned panko breadcrumbs into another.
- Dip each fish fillet into the flour, then the egg and finally the breadcrumbs.
- Preheat the oven to 180oC (160oC fan bake). Line a baking dish with baking paper.
- Heat some olive oil in a frying pan and brown the fish on both sides.
- Place the fish into the prepared baking dish and bake for 10 minutes or until the fish is flaky.
- Place the butter and garlic into the same frying pan and cook for 1 minute. Stir through the parsley.
- Serve each fish fillet with a drizzle of the butter sauce and top with some mesclun and shredded carrot and some salad dressing.
