Morning Glory Muffins
- 2 cups flour
- 1 1/4 cups brown sugar
- 2 teaspoons each: baking soda, cinnamon
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 3 eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 orange
- 2 cups carrot - grated
- 1 Granny Smith apple - grated with skin on
- 3/4 cup raisins
- 1/2 cup walnuts - chopped
- 1 x 225g can crushed pineapple - drained
Method
Morning Glory Muffins
- Preheat oven to 180oC (160oC fan bake). Spray 10 x Texas muffin holes with baking spray.
- In a large bowl, whisk the flour, brown sugar, baking soda, cinnamon, salt and ginger together.
- In a medium bowl, whisk the eggs, oil, vanilla, 1 teaspoon orange zest and the juice of one orange together.
- Make a well in the dry ingredients. Tip the wet ingredients into the dry ingredients and stir to just combine.
- Add in the remaining ingredients. divide the mixture between the prepared muffin holes and bake for 25 - 30 minutes or until cooked through.
