Ingredients

Morning Glory Muffins

  • 2 cups flour
  • 1 1/4 cups brown sugar
  • 2 teaspoons each: baking soda, cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 3 eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 orange
  • 2 cups carrot - grated
  • 1 Granny Smith apple - grated with skin on
  • 3/4 cup raisins
  • 1/2 cup walnuts - chopped
  • 1 x 225g can crushed pineapple - drained

Method

Morning Glory Muffins

  • Preheat oven to 180oC (160oC fan bake). Spray 10 x Texas muffin holes with baking spray.
  • In a large bowl, whisk the flour, brown sugar, baking soda, cinnamon, salt and ginger together.
  • In a medium bowl, whisk the eggs, oil, vanilla, 1 teaspoon orange zest and the juice of one orange together.
  • Make a well in the dry ingredients. Tip the wet ingredients into the dry ingredients and stir to just combine.
  • Add in the remaining ingredients. divide the mixture between the prepared muffin holes and bake for 25 - 30 minutes or until cooked through.
