Ingredients

Pizza Dough

  • 1 cup warm water
  • 1 tablespoon each: honey, vegetable oil, instant yeast
  • 1 teaspoon salt
  • 2 1/2 cups flour

Mushroom Truffle Pizza

  • 1/4 cup truffle oil - divided
  • 400g mixed mushrooms - sliced
  • 2 cloves garlic - crushed
  • 1 cup mozzarella cheese - grated
  • 1/4 cup parmesan cheese - grated
  • 2 handfuls baby spinach

Method

Pizza Dough

  • In an electric stand mixer with a dough hook, mix all the ingredients, except the flour, until well combined.
  • Gradually add the flour while still mixing. Knead the dough for 3 minutes in the mixer.
  • Over the bowl with plastic wrap and leave in a warm place for 30 minutes.
  • On a lightly floured surface, half the dough and roll out two pizza bases. Place on baking trays lined with baking paper.

Mushroom Truffle Pizza

  • Preheat the oven to 230oC (210oC fan bake).
  • In a large frying pan, heat two tablespoons truffle oil and sauté the mushrooms and garlic for about 10 minutes.
  • Sprinkle the pizza bases with the mushrooms, spinach and cheeses.
  • Place the first tray at the bottom of the oven so the base crisps up and cook for 10 - 12 minutes. Repeat with the second pizza.
  • Serve the pizzas drizzled with truffle oil.
