Ingredients
Pizza Dough
- 1 cup warm water
- 1 tablespoon each: honey, vegetable oil, instant yeast
- 1 teaspoon salt
- 2 1/2 cups flour
Mushroom Truffle Pizza
- 1/4 cup truffle oil - divided
- 400g mixed mushrooms - sliced
- 2 cloves garlic - crushed
- 1 cup mozzarella cheese - grated
- 1/4 cup parmesan cheese - grated
- 2 handfuls baby spinach
Method
Pizza Dough
- In an electric stand mixer with a dough hook, mix all the ingredients, except the flour, until well combined.
- Gradually add the flour while still mixing. Knead the dough for 3 minutes in the mixer.
- Over the bowl with plastic wrap and leave in a warm place for 30 minutes.
- On a lightly floured surface, half the dough and roll out two pizza bases. Place on baking trays lined with baking paper.
Mushroom Truffle Pizza
- Preheat the oven to 230oC (210oC fan bake).
- In a large frying pan, heat two tablespoons truffle oil and sauté the mushrooms and garlic for about 10 minutes.
- Sprinkle the pizza bases with the mushrooms, spinach and cheeses.
- Place the first tray at the bottom of the oven so the base crisps up and cook for 10 - 12 minutes. Repeat with the second pizza.
- Serve the pizzas drizzled with truffle oil.
