Ingredients

Passionfruit Shortbread

  • 250g butter - softened
  • 1 cup sugar
  • Pulp of 6 passionfruit or 1/2 cup frozen passionfruit - defrosted
  • 2 cups flour
  • 1 1/3 cup self-rising flour
  • 100g white chocolate
  • 2 tablespoons passionfruit syrup for serving

Method

Passionfruit Shortbread

  • Preheat the oven to 180oC (160oC fan bake). Line baking trays with baking paper.
  • Cream the butter and sugar until light and fluffy.
  • Fold through the passionfruit pulp.
  • Sift over the flours and mix to create a dough.
  • Place the dough onto a lightly floured surface and roll out to 1/2 cm in thickness.
  • Cut the shortbread out into shapes and prick with a fork.
  • Place the shortbread onto the prepared baking trays and bake for 13 - 15 minutes or until starting to turn golden.
  • Place onto a baking rack to cool.
  • Melt the chocolate in the microwave and drizzle over the shortbread.
  • Drizzle with the passionfruit syrup to serve.
