Ingredients
Passionfruit Shortbread
- 250g butter - softened
- 1 cup sugar
- Pulp of 6 passionfruit or 1/2 cup frozen passionfruit - defrosted
- 2 cups flour
- 1 1/3 cup self-rising flour
- 100g white chocolate
- 2 tablespoons passionfruit syrup for serving
Method
Passionfruit Shortbread
- Preheat the oven to 180oC (160oC fan bake). Line baking trays with baking paper.
- Cream the butter and sugar until light and fluffy.
- Fold through the passionfruit pulp.
- Sift over the flours and mix to create a dough.
- Place the dough onto a lightly floured surface and roll out to 1/2 cm in thickness.
- Cut the shortbread out into shapes and prick with a fork.
- Place the shortbread onto the prepared baking trays and bake for 13 - 15 minutes or until starting to turn golden.
- Place onto a baking rack to cool.
- Melt the chocolate in the microwave and drizzle over the shortbread.
- Drizzle with the passionfruit syrup to serve.
