Ingredients

Pork Chops with Creamy Mushroom & Spinach sauce

  • 4 pork chops
  • Garlic salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 30g butter - divided
  • 200g brown mushrooms - sliced
  • 3 cloves garlic - crushed
  • 1/4 teaspoon Italian herbs
  • 1 tablespoon flour
  • 1/2 cup chicken stock
  • 1/2 teaspoon lemon juice
  • 3/4 cup cream
  • 2 cups baby spinach

Method

Pork Chops with Creamy Mushroom & Spinach Sauce

  • Season the pork chops with garlic salt and pepper.
  • In a large pan, heat the oil and 15g butter over a medium/high heat.
  • Sear the pork chops on both sides - about 2 minutes each side. Set aside.
  • Add the remaining 15g butter to the pan over a medium heat.
  • Sauté the mushrooms, garlic and Italian herbs for 2 - 3 minutes.
  • Stir in the flour and cook for 1 minute.
  • Add in the chicken stock and lemon juice and cook for 2 minutes.
  • Add in the cream, stir well, then add in the pork chops and any resting juices.
  • Tuck the spinach in and around the pork chops and cook for a few minutes or until the pork is cooked to your liking.
