Pork Chops with Creamy Mushroom & Spinach sauce
- 4 pork chops
- Garlic salt and freshly ground black pepper
- 1 tablespoon olive oil
- 30g butter - divided
- 200g brown mushrooms - sliced
- 3 cloves garlic - crushed
- 1/4 teaspoon Italian herbs
- 1 tablespoon flour
- 1/2 cup chicken stock
- 1/2 teaspoon lemon juice
- 3/4 cup cream
- 2 cups baby spinach
Method
Pork Chops with Creamy Mushroom & Spinach Sauce
- Season the pork chops with garlic salt and pepper.
- In a large pan, heat the oil and 15g butter over a medium/high heat.
- Sear the pork chops on both sides - about 2 minutes each side. Set aside.
- Add the remaining 15g butter to the pan over a medium heat.
- Sauté the mushrooms, garlic and Italian herbs for 2 - 3 minutes.
- Stir in the flour and cook for 1 minute.
- Add in the chicken stock and lemon juice and cook for 2 minutes.
- Add in the cream, stir well, then add in the pork chops and any resting juices.
- Tuck the spinach in and around the pork chops and cook for a few minutes or until the pork is cooked to your liking.
