Ingredients

Pork Chops with Pears and Ginger

  • 4 x pork chops
  • Garlic salt and freshly ground black pepper
  • 1 tablespoon cooking oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons fresh rosemary - finely chopped
  • 2 cups chicken stock
  • 2 tablespoons fresh ginger - grated
  • 2 pears - peeled and thickly sliced
  • 1 small onion - cut into wedges
  • 2 teaspoons cornflour mixed with 2 tablespoons water

Method

Pork Chops with Pears and Ginger

  • Season the pork chops with garlic salt and pepper.
  • Heat the oil in a large frying pan over a medium/high heat. Pan-fry the pork chops to your liking - set aside on a warm plate and cover with foil.
  • Whisk together the vinegar, brown sugar and rosemary. Add to the same pan and cook for a minute.
  • Pour in the chicken stock, ginger, pears and onion wedges. Simmer for 5 minutes.
  • Stir in the cornflour mixture and cook until the sauce is thickened.
  • Serve the pork chops smothered with the sauce.
