Pork Chops with Pears and Ginger
- 4 x pork chops
- Garlic salt and freshly ground black pepper
- 1 tablespoon cooking oil
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons fresh rosemary - finely chopped
- 2 cups chicken stock
- 2 tablespoons fresh ginger - grated
- 2 pears - peeled and thickly sliced
- 1 small onion - cut into wedges
- 2 teaspoons cornflour mixed with 2 tablespoons water
Method
Pork Chops with Pears and Ginger
- Season the pork chops with garlic salt and pepper.
- Heat the oil in a large frying pan over a medium/high heat. Pan-fry the pork chops to your liking - set aside on a warm plate and cover with foil.
- Whisk together the vinegar, brown sugar and rosemary. Add to the same pan and cook for a minute.
- Pour in the chicken stock, ginger, pears and onion wedges. Simmer for 5 minutes.
- Stir in the cornflour mixture and cook until the sauce is thickened.
- Serve the pork chops smothered with the sauce.
