Ingredients

Pork Fillet with Creamy Garlic & Spinach Sauce

  • 2 x pork fillets
  • Garlic salt and freshly ground black pepper
  • 1 teaspoon paprika
  • 2 teaspoons cooking oil
  • 30g butter
  • 6 cloves garlic - crushed
  • 1 onion - finely diced
  • 1 teaspoon Italian herbs
  • Pinch chilli flakes
  • 1/3 cup chicken stock
  • 1 1/2 cups cream
  • 1/4 cup parmesan cheese - grated
  • 4 cups baby spinach

Method

Pork Fillet with Creamy Garlic & Spinach Sauce

  • Preheat the oven to 180oC (160oC fan bake).
  • Season the pork fillets with garlic salt, pepper and paprika.
  • Heat the oil in a large, oven proof frying pan over a medium/high heat.
  • Sear the pork fillets well on all sides - place the pan in the oven and cook for 8 minutes or until your desired doneness. Set the pork aside on a warm plate and cover with foil.
  • Add the butter to the same pan. Sauté the garlic, onion, herbs and chilli flakes for 3 - 4 minutes. Add in the chicken stock and reduce by half.
  • Add in the cream and simmer until starting to thicken.
  • Add in the parmesan, spinach, and any resting juices from the pork.
  • Slice the rested pork and serve with the sauce.
