Pork Fillet with Creamy Garlic & Spinach Sauce
- 2 x pork fillets
- Garlic salt and freshly ground black pepper
- 1 teaspoon paprika
- 2 teaspoons cooking oil
- 30g butter
- 6 cloves garlic - crushed
- 1 onion - finely diced
- 1 teaspoon Italian herbs
- Pinch chilli flakes
- 1/3 cup chicken stock
- 1 1/2 cups cream
- 1/4 cup parmesan cheese - grated
- 4 cups baby spinach
Method
Pork Fillet with Creamy Garlic & Spinach Sauce
- Preheat the oven to 180oC (160oC fan bake).
- Season the pork fillets with garlic salt, pepper and paprika.
- Heat the oil in a large, oven proof frying pan over a medium/high heat.
- Sear the pork fillets well on all sides - place the pan in the oven and cook for 8 minutes or until your desired doneness. Set the pork aside on a warm plate and cover with foil.
- Add the butter to the same pan. Sauté the garlic, onion, herbs and chilli flakes for 3 - 4 minutes. Add in the chicken stock and reduce by half.
- Add in the cream and simmer until starting to thicken.
- Add in the parmesan, spinach, and any resting juices from the pork.
- Slice the rested pork and serve with the sauce.
