Ingredients

Salt & Pepper Prawns

  • 500g raw jumbo prawn cutlets
  • 3/4 cup cornflour
  • 1 tablespoon each: light soy sauce, mirin
  • 1 egg - whisked
  • Oil for frying

Salt & Pepper Mix

  • 1 tablespoon whole coriander seeds
  • 1 1/2 tablespoons black peppercorns
  • 1 tablespoon sea salt

Method

Salt & Pepper Prawns

  • Mix the cornflour, soy sauce, mirin and whisked egg together. Toss through the prawn cutlets.
  • In a dry pan, toast the coriander seeds and peppercorns together for 1 - 2 minutes.
  • Using a mortar and pestle, grind them together. Add in the sea salt.
  • Heat some oil in a frying pan or wok over a high heat.
  • Fry the prawns in batches until golden and cooked through.
  • Sprinkle with the salt and pepper mix.
