Ingredients
Salt & Pepper Prawns
- 500g raw jumbo prawn cutlets
- 3/4 cup cornflour
- 1 tablespoon each: light soy sauce, mirin
- 1 egg - whisked
- Oil for frying
Salt & Pepper Mix
- 1 tablespoon whole coriander seeds
- 1 1/2 tablespoons black peppercorns
- 1 tablespoon sea salt
Method
Salt & Pepper Prawns
- Mix the cornflour, soy sauce, mirin and whisked egg together. Toss through the prawn cutlets.
- In a dry pan, toast the coriander seeds and peppercorns together for 1 - 2 minutes.
- Using a mortar and pestle, grind them together. Add in the sea salt.
- Heat some oil in a frying pan or wok over a high heat.
- Fry the prawns in batches until golden and cooked through.
- Sprinkle with the salt and pepper mix.
