Ingredients

Slow Cooker Beef Coconut Curry

  • 1 kg diced beef
  • 1/2 teaspoon each: garlic salt, freshly ground black pepper
  • 2 tablespoons cooking oil
  • 1 large onion - diced
  • 2 red capsicums - diced
  • 4 cloves garlic - crushed
  • 2 teaspoons fresh ginger - grated
  • 3 tablespoons red curry paste
  • 2 tablespoons tomato paste
  • 1 beef stock cube - crumbled or 1 1/2 teaspoons powdered beef stock
  • 400g can diced tomatoes
  • 400ml can coconut milk
  • 2 teaspoons sugar
  • Rice and naan bread for serving

Method

Slow Cooker Beef Coconut Curry

  • Season the diced beef with the garlic salt and pepper.
  • Heat 1 tablespoon oil in a large pan and sear the beef in batches. Place in the slow cooker.
  • Add another tablespoon oil to the same pan and sauté the onion and red capsicum for a few minutes.
  • Stir through the garlic, ginger, curry paste and tomato paste. Cook for 1 minute.
  • Crumble over the beef stock cube, stir in the tomatoes and coconut milk. Stir in the sugar.
  • Simmer for 5 minutes - tip the mixture into the slow cooker with the beef.
  • Cook on low for 5 - 6 hours.
  • Serve with rice and naan bread.
