Slow Cooker Beef Coconut Curry
- 1 kg diced beef
- 1/2 teaspoon each: garlic salt, freshly ground black pepper
- 2 tablespoons cooking oil
- 1 large onion - diced
- 2 red capsicums - diced
- 4 cloves garlic - crushed
- 2 teaspoons fresh ginger - grated
- 3 tablespoons red curry paste
- 2 tablespoons tomato paste
- 1 beef stock cube - crumbled or 1 1/2 teaspoons powdered beef stock
- 400g can diced tomatoes
- 400ml can coconut milk
- 2 teaspoons sugar
- Rice and naan bread for serving
Method
Slow Cooker Beef Coconut Curry
- Season the diced beef with the garlic salt and pepper.
- Heat 1 tablespoon oil in a large pan and sear the beef in batches. Place in the slow cooker.
- Add another tablespoon oil to the same pan and sauté the onion and red capsicum for a few minutes.
- Stir through the garlic, ginger, curry paste and tomato paste. Cook for 1 minute.
- Crumble over the beef stock cube, stir in the tomatoes and coconut milk. Stir in the sugar.
- Simmer for 5 minutes - tip the mixture into the slow cooker with the beef.
- Cook on low for 5 - 6 hours.
- Serve with rice and naan bread.
