Ingredients

Whole Beef Fillet with Mustard & Bourbon Sauce

  • Whole beef fillet - ends trimmed so it cooks evenly
  • Garlic salt and freshly ground black pepper
  • 1 tablespoon olive oil

Mustard & Bourbon Sauce

Method

Whole Beef Fillet with Mustard & Bourbon Sauce

  • Rub the oil, garlic salt and freshly ground black pepper all over the fillet.
  • In a large pan, sear each side of the beef over a high temperature until browned.
  • Preheat oven to 200oC (180oC fan bake).
  • Cook the beef for approximately 35 - 45 minutes or until the internal temperature reaches 54oC for medium-rare doneness.
  • Place the beef on a warm plate and cover with foil and leave to rest for 10 minutes before carving. Tip any resting juices into the sauce.
  • Serve with the mustard and bourbon sauce.
