Whole Beef Fillet with Mustard & Bourbon Sauce
- Whole beef fillet - ends trimmed so it cooks evenly
- Garlic salt and freshly ground black pepper
- 1 tablespoon olive oil

Method
Whole Beef Fillet with Mustard & Bourbon Sauce
- Rub the oil, garlic salt and freshly ground black pepper all over the fillet.
- In a large pan, sear each side of the beef over a high temperature until browned.
- Preheat oven to 200oC (180oC fan bake).
- Cook the beef for approximately 35 - 45 minutes or until the internal temperature reaches 54oC for medium-rare doneness.
- Place the beef on a warm plate and cover with foil and leave to rest for 10 minutes before carving. Tip any resting juices into the sauce.
- Serve with the mustard and bourbon sauce.
