For the Individual Pavlovas
- 3 egg whites
- 1 1/4 cups caster sugar
- 2 teaspoons cornflour
- 1 teaspoon vanilla essence
- 1 teaspoon white vinegar
- 4 tablespoons boiling water
Method
For the Individual Pavlovas
- Preheat the oven to 190°C (170°C fan bake).
- Place all the ingredients in a large mixing bowl.
- Beat until the mixture is smooth, shiny and stiff, about 12 minutes.
- Line a baking tray with baking paper and mark 6 x 8cm-diameter circles on the paper.
- Pile the meringue mixture into the circles.
- Bake for 5 minutes. Turn the oven off and leave for 1 1/2 hours. Remove and cool.
- Top with whipped cream (1 cup cream whipped with 1 tablespoon icing sugar) and fresh seasonal fruit.
