Bacon & Egg Pie
- 2 sheets puff pastry, defrosted
- 8 eggs
- salt and pepper
- 250g bacon, diced
- 1 small onion, diced
- 1 cup baby spinach
- 3/4 cup grated cheese
Method
Bacon & Egg Pie
- Preheat oven to 200oC (180oC fan bake). Spray a square or round 20cm pie tin with cooking spray.
- Push the first sheet of pastry into the pie tin.
- Crack in 4 eggs and season with salt and pepper.
- Sprinkle over half the diced bacon, all the onion and spinach and half the cheese.
- Crack over the other 4 eggs and season with salt and pepper.
- Top with the remaining cheese and bacon.
- Place the other sheet of pastry over the top of the pie and press around the edges.
- Cook for 20 - 25 minutes.
