Ingredients

Bacon & Egg Pie

  • 2 sheets puff pastry, defrosted
  • 8 eggs
  • salt and pepper
  • 250g bacon, diced
  • 1 small onion, diced
  • 1 cup baby spinach
  • 3/4 cup grated cheese

Method

Bacon & Egg Pie

  • Preheat oven to 200oC (180oC fan bake). Spray a square or round 20cm pie tin with cooking spray.
  • Push the first sheet of pastry into the pie tin.
  • Crack in 4 eggs and season with salt and pepper.
  • Sprinkle over half the diced bacon, all the onion and spinach and half the cheese.
  • Crack over the other 4 eggs and season with salt and pepper.
  • Top with the remaining cheese and bacon.
  • Place the other sheet of pastry over the top of the pie and press around the edges.
  • Cook for 20 - 25 minutes.
