For the banana and double chocolate muffins
- 2 cups self-raising flour
- 2 tablespoons cocoa
- 1/2 cup sugar
- 1/2 cup chocolate chips
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 3 ripe bananas, mashed
- 1/4 cup canola oil
- 1/4 cup milk
- 1 egg
- 1 teaspoon vanilla essence
Method
For the banana and double chocolate muffins
- Preheat the oven to 200°C (180°C fan bake).
- Spray a 12-hole muffin pan with baking spray.
- In a large bowl mix the first 6 ingredients together with a whisk.
- Add the remaining ingredients and mix. Be careful not to overmix or your muffins will be tough.
- Spoon the mixture into the muffin pan and bake for 10–15 minutes until the centres spring back
when pressed.
