Ingredients

For the banana and double chocolate muffins

  • 2 cups self-raising flour
  • 2 tablespoons cocoa
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 ripe bananas, mashed
  • 1/4 cup canola oil
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla essence

Method

For the banana and double chocolate muffins

  • Preheat the oven to 200°C (180°C fan bake).
  • Spray a 12-hole muffin pan with baking spray.
  • In a large bowl mix the first 6 ingredients together with a whisk.
  • Add the remaining ingredients and mix. Be careful not to overmix or your muffins will be tough.
  • Spoon the mixture into the muffin pan and bake for 10–15 minutes until the centres spring back when pressed.
