For the Banana, Blueberry & Chocolate Muffins
- 2 cups self-raising flour
- 1/2 cup caster sugar
- 150g chocolate chunks
- 1/2 teaspoon salt
- 100g butter — melted
- 1 1⁄4 cups milk
- 1 egg — beaten
- 1 teaspoon vanilla essence
- 1 cup mashed over-ripe banana
- 3⁄4 cup blueberries – fresh or frozen
Method
For the Banana, Blueberry & Chocolate Muffins
- Mix together the flour, sugar, chocolate and salt in a large mixing bowl.
- In another bowl, mix together the butter, milk, egg and vanilla essence.
- Make a well in the dry ingredients and gently mix in the liquids.
- Gently mix in the banana and blueberries. Be careful not to over-mix.
- Spoon the mixture into 12 non-stick sprayed muffin pans.
- Bake at 200°C (180°C fan bake) for 20 minutes, until the muffins spring back when pressed in the centre.
