Ingredients

For the Banana, Blueberry & Chocolate Muffins

  • 2 cups self-raising flour
  • 1/2 cup caster sugar
  • 150g chocolate chunks
  • 1/2 teaspoon salt
  • 100g butter — melted
  • 1 1⁄4 cups milk
  • 1 egg — beaten
  • 1 teaspoon vanilla essence
  • 1 cup mashed over-ripe banana
  • 3⁄4 cup blueberries – fresh or frozen

Method

For the Banana, Blueberry & Chocolate Muffins

  • Mix together the flour, sugar, chocolate and salt in a large mixing bowl.
  • In another bowl, mix together the butter, milk, egg and vanilla essence.
  • Make a well in the dry ingredients and gently mix in the liquids.
  • Gently mix in the banana and blueberries. Be careful not to over-mix.
  • Spoon the mixture into 12 non-stick sprayed muffin pans.
  • Bake at 200°C (180°C fan bake) for 20 minutes, until the muffins spring back when pressed in the centre.
