For the Banana Bread
- 6 overripe bananas — mashed
- 4 eggs
- 3 1/2 cups self-raising flour
- 1/2 teaspoon baking soda
- 1/2 cup desiccated coconut
- 2 cups sugar
- 1 teaspoon vanilla essence
- 250g butter
Method
For the Banana Bread
- In a large pot soften the butter. Add in the mashed bananas.
- Beat the eggs in a separate bowl and add to the banana mixture.
- Remove the pot from the heat and add the sugar, flour, coconut and vanilla essence.
- Pour mixture into a large lined loaf tin.
- Cook at 165°C (150°C fan bake) for 1 hour or until a skewer comes out clean.
