Chicken Bake
- 6 boneless and skinless chicken thighs
- 1/2 packet 30g taco seasoning
- 1 zucchini, thinly sliced
- 6 rashers bacon, chopped and cooked
- 1/2 cup grated mozzarella
- 1/2 cup grated Parmesan
Method
Chicken Bake
- Heat the oven to 190oC (170oC fan bake).
- Place the chicken thighs in a casserole dish.
- Sprinkle the chicken with the taco seasoning.
- Top each chicken thigh with zucchini slices and chopped bacon.
- Top with the cheeses.
- Bake uncovered for about 30 minutes.
- Turn the oven to grill and cook until golden brown.
- Allow to rest for 5 - 10 minutes before serving.
