For the Chocolate and Nut Chunk Cookies
- 125g butter — softened
- 1/2 cup brown sugar
- 1/2 cup caster sugar
- 1 egg
- 1 teaspoon vanilla essence
- 1 1/2 cups self-raising flour
- 200g bar of cooking chocolate — cut into chunks
- 1/2 cup of chopped nuts — any type that you like
Method
For the Chocolate and Nut Chunk Cookies
- Cream the butter, brown sugar and caster sugar. Beat in the egg.
- Add the vanilla essence and the flour. Mix together.
- Stir in the chocolate pieces and the nuts and mix thoroughly.
- With your hands, shape the mixture into balls and place on a lined baking tray.
- Gently flatten them slightly.
- Cook at 180°C (160°C fan bake) for approximately 10–12 minutes.
