Ingredients

For the Chocolate and Nut Chunk Cookies

  • 125g butter — softened
  • 1/2 cup brown sugar
  • 1/2 cup caster sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 1/2 cups self-raising flour
  • 200g bar of cooking chocolate — cut into chunks
  • 1/2 cup of chopped nuts — any type that you like

Method

For the Chocolate and Nut Chunk Cookies

  • Cream the butter, brown sugar and caster sugar. Beat in the egg.
  • Add the vanilla essence and the flour. Mix together.
  • Stir in the chocolate pieces and the nuts and mix thoroughly.
  • With your hands, shape the mixture into balls and place on a lined baking tray.
  • Gently flatten them slightly.
  • Cook at 180°C (160°C fan bake) for approximately 10–12 minutes.
