white chocolate and desiccated coconut for dipping
Method
For the chocolate Santa boots
Preheat the oven to 200°C (180°C fan bake). Line 2 baking trays with baking paper.
In a bowl whisk together the flour, cocoa, baking powder and salt. Set aside.
In a large bowl combine the softened butter and the icing sugar.
Beat until light and fluffy, about 2 minutes.
Add the egg and vanilla essence and beat well until combined.
Gradually beat in the flour mixture.
Sprinkle some flour on your work surface and roll out the dough to about .5 cm.
Using a cookie cutter, cut the cookies out and carefully place them on the prepared tray.
Bake for 7–8 minutes.
Once the cookies are cool, microwave the white chocolate for 1 minute, then stir. Keep doing this in 20-second intervals until the chocolate is melted and smooth.
Dip the top of each biscuit in the chocolate and then into the coconut.
Leave to set.
