Ingredients
For the chocolate Santa boots
- 2 cups flour
- 3/4 cup cocoa
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 225g butter, softened
- 1 1/2 cups icing sugar
- 1 egg
- 2 teaspoons vanilla essence
- white chocolate and desiccated coconut for dipping
Method
For the chocolate Santa boots
- Preheat the oven to 200°C (180°C fan bake). Line 2 baking trays with baking paper.
- In a bowl whisk together the flour, cocoa, baking powder and salt. Set aside.
- In a large bowl combine the softened butter and the icing sugar.
- Beat until light and fluffy, about 2 minutes.
- Add the egg and vanilla essence and beat well until combined.
- Gradually beat in the flour mixture.
- Sprinkle some flour on your work surface and roll out the dough to about .5 cm.
- Using a cookie cutter, cut the cookies out and carefully place them on the prepared tray.
- Bake for 7–8 minutes.
- Once the cookies are cool, microwave the white chocolate for 1 minute, then stir. Keep doing this in 20-second intervals until the chocolate is melted and smooth.
- Dip the top of each biscuit in the chocolate and then into the coconut.
- Leave to set.
