Ingredients
Coconut Ice
- 4 cups caster sugar
- 1 1/4 cup milk
- 2 1/2 cups desiccated coconut
- several drops pink food colouring
Method
Coconut Ice
- Line a 28cm x 18cm slice tin with baking paper.
- Combine the sugar and milk in a large saucepan and stir over low heat until the sugar is dissolved.
- Bring the mixture to a boil and allow to boil for 5 minutes, stirring a few times.
- Take the mixture off the heat and add the coconut. Stir to combine.
- Return the mixture to the heat and cook, stirring for another 5 minutes. The mixture should look like porridge. It may need a little more than 5 minutes.
- Pour half the mixture into the prepared slice tin and place in the fridge for 5 minutes.
- Add a few drops of pink food colouring to the remaining mixture and stir well to get an even pink colour.
- Pour the pink mixture over the white mixture and leave to set at room temperature.
- Cut into bite sized pieces.
