Combine the sugar and milk in a large saucepan and stir over low heat until the sugar is dissolved.
Bring the mixture to a boil and allow to boil for 5 minutes, stirring a few times.
Take the mixture off the heat and add the coconut. Stir to combine.
Return the mixture to the heat and cook, stirring for another 5 minutes. The mixture should look like porridge. It may need a little more than 5 minutes.
Pour half the mixture into the prepared slice tin and place in the fridge for 5 minutes.
Add a few drops of pink food colouring to the remaining mixture and stir well to get an even pink colour.
Pour the pink mixture over the white mixture and leave to set at room temperature.
Cut into bite sized pieces.
