Ingredients
For the Corn Chowder Soup
- 2 x 410g tin creamed corn
- 1 onion, diced
- 1 red pepper, diced
- 2 rashers of bacon, cut into 1cm pieces
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2 tablespoons finely chopped parsley
Method
For the Corn Chowder Soup
- Melt the butter and oil together in a medium saucepan.
- Add the onion, red pepper and bacon. Sauté until golden brown.
- Add the creamed corn, milk, parsley and a good grind of pepper.
- Simmer for a few minutes and serve.
