Cornflake Biscuits
- 125g butter, softened
- 1/3 cup brown sugar
- 1 egg
- 1 cup self raising flour
- 1 cup dried apricots, chopped
- 150g dark chocolate, chopped
- 2 1/2 cups cornflakes
Method
Cornflake Biscuits
- Preheat the oven to 180oC (160oC fan bake). Line two baking trays with baking paper.
- Cream the butter and brown sugar together. Add the egg and mix well.
- Add in the flour, then stir in the apricots and chocolate chunks.
- Place the cornflakes in a separate bowl.
- Drop teaspoonfuls of the mixture into the cornflakes and roll to coat.
- Place on the prepared baking trays.
- Bake for 20 minutes.
