Cornflake Biscuits

  • 125g butter, softened
  • 1/3 cup brown sugar
  • 1 egg
  • 1 cup self raising flour
  • 1 cup dried apricots, chopped
  • 150g dark chocolate, chopped
  • 2 1/2 cups cornflakes

Method

Cornflake Biscuits

  • Preheat the oven to 180oC (160oC fan bake). Line two baking trays with baking paper.
  • Cream the butter and brown sugar together. Add the egg and mix well.
  • Add in the flour, then stir in the apricots and chocolate chunks.
  • Place the cornflakes in a separate bowl.
  • Drop teaspoonfuls of the mixture into the cornflakes and roll to coat.
  • Place on the prepared baking trays.
  • Bake for 20 minutes.
