Ingredients
For the Creamy Pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 5 cloves garlic — crushed
- 1 onion — diced
- 250g spaghetti
- 1 teaspoon powdered chicken stock
- 1 cup cream
- 1 1/2 cups four cheese mix
- 1/4 cup parsley — finely chopped
- 2 cups baby spinach
Method
For the Creamy Pasta
- Heat the olive oil and butter on a medium heat in a large pan. Add the garlic and onion and cook for 1 minute without over browning.
- Cook the pasta per the packet instructions. Reserve one cup of pasta water and mix with the chicken stock.
- Add the pasta water, cream and cooked spaghetti to the large pan with the onion and garlic.
- Bring to the boil, stirring. Add the cheese and spinach. Stir for a minute or two until everything is mixed together.
- Sprinkle with the chopped parsley and serve.
