Ingredients
For the fluffy pancakes
- 1 1/2 cups flour
- 1 tablespoon sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plus 2 tablespoons milk
- 1 egg
- fresh fruit and maple syrup for serving
Method
For the fluffy pancakes
- In a large bowl whisk together the first 5 ingredients.
- In a separate bowl whisk together the milk and egg.
- Pour the wet ingredients into the dry ingredients. Don’t overmix.
- Heat a large frying pan over a medium heat and spray with the baking spray.
- Using a ladle, pour the mixture into the frying pan, making them as small or large as you like.
- Cook until bubbles start to form, then flip and cook the other side.
- Serve topped with fresh fruit and maple syrup.
