Ingredients

For the ginger and lemon chicken

  • 1/3 cup flour
  • 1 tablespoon ground ginger
  • 750g chicken tenders
  • 50g butter
  • 1 tablespoon olive oil
  • 1 tablespoon raw sugar
  • 1/3 cup lemon juice

Method

For the ginger and lemon chicken

  • Whisk the flour and ground ginger together in a medium bowl.
  • Add the chicken tenders and toss to coat well.
  • Heat the butter and olive oil in a frying pan over a medium heat.
  • Cook the tenders for about 3–4 minutes on each side until golden brown. Set aside.
  • Add the raw sugar to the pan and scrape up the cooked chicken bits with a wooden spoon.
  • Add the lemon juice and stir to incorporate the bits, then return the cooked chicken to the pan.
  • Bring to a simmer for 1 minute, then serve.
