For the ginger and lemon chicken
- 1/3 cup flour
- 1 tablespoon ground ginger
- 750g chicken tenders
- 50g butter
- 1 tablespoon olive oil
- 1 tablespoon raw sugar
- 1/3 cup lemon juice
Method
For the ginger and lemon chicken
- Whisk the flour and ground ginger together in a medium bowl.
- Add the chicken tenders and toss to coat well.
- Heat the butter and olive oil in a frying pan over a medium heat.
- Cook the tenders for about 3–4 minutes on each side until golden brown. Set aside.
- Add the raw sugar to the pan and scrape up the cooked chicken bits with a wooden spoon.
- Add the lemon juice and stir to incorporate the bits, then return the cooked chicken to the pan.
- Bring to a simmer for 1 minute, then serve.
