Ingredients

For the the gingerbread Christmas trees

  • 115g butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup golden syrup
  • 1 egg yolk
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 125g icing sugar
  • 1–2 tablespoons warm water
  • sweets to decorate

Method

For the the gingerbread Christmas trees

  • Using an electric beater, mix together the butter and sugar until light and fluffy.
  • Add the golden syrup and egg yolk. Beat until creamy.
  • Sift in the flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt.
  • Beat again until a dough starts to form.
  • Generously sprinkle your work surface and rolling pin with some flour. Knead the dough for a couple of minutes until it comes together to form a soft ball.
  • Wrap in plastic wrap and place in the fridge for 30 minutes.
  • Preheat the oven to 180°C (160°C fan bake). Line several baking trays with baking paper.
  • Roll out the dough to approximately 3mm thick, then cut out Christmas tree shapes or any other shape you like.
  • Carefully put the shapes onto the prepared baking trays and bake for 8–10 minutes or until they are golden. Transfer them to a cooling rack to cool completely.
