Using an electric beater, mix together the butter and sugar until light and fluffy.
Add the golden syrup and egg yolk. Beat until creamy.
Sift in the flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt.
Beat again until a dough starts to form.
Generously sprinkle your work surface and rolling pin with some flour. Knead the dough for a
couple of minutes until it comes together to form a soft ball.
Wrap in plastic wrap and place in the fridge for 30 minutes.
Preheat the oven to 180°C (160°C fan bake). Line several baking trays with baking paper.
Roll out the dough to approximately 3mm thick, then cut out Christmas tree shapes or any other
shape you like.
Carefully put the shapes onto the prepared baking trays and bake for 8–10 minutes or until they
are golden. Transfer them to a cooling rack to cool completely.
