Ingredients
For the the gingerbread Christmas trees
- 115g butter, softened
- 3/4 cup brown sugar
- 1/2 cup golden syrup
- 1 egg yolk
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 125g icing sugar
- 1–2 tablespoons warm water
- sweets to decorate
Method
For the the gingerbread Christmas trees
- Using an electric beater, mix together the butter and sugar until light and fluffy.
- Add the golden syrup and egg yolk. Beat until creamy.
- Sift in the flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt.
- Beat again until a dough starts to form.
- Generously sprinkle your work surface and rolling pin with some flour. Knead the dough for a couple of minutes until it comes together to form a soft ball.
- Wrap in plastic wrap and place in the fridge for 30 minutes.
- Preheat the oven to 180°C (160°C fan bake). Line several baking trays with baking paper.
- Roll out the dough to approximately 3mm thick, then cut out Christmas tree shapes or any other shape you like.
- Carefully put the shapes onto the prepared baking trays and bake for 8–10 minutes or until they are golden. Transfer them to a cooling rack to cool completely.
