Ingredients

For the ham and cheese mini quiches

  • 4 sheets flaky pastry
  • 1 egg
  • 1/4 cup cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon finely chopped parsley
  • salt and pepper
  • 1 heaped cup grated tasty cheese
  • 125g ham, finely chopped

Method

For the ham and cheese mini quiches

  • Preheat the oven to 200°C (180°C fan bake). Spray a 12-hole muffin pan with baking spray.
  • Using a 6cm cookie cutter, cut circles from the pastry.
  • Press the pastry circles into the greased trays.
  • In a jug or bowl whisk together the egg, cream, mustard, parsley and some salt and pepper.
  • Mix in the cheese and ham.
  • Spoon 2 tablespoons of the filling into each pastry shell.
  • Bake for 12–15 minutes or until the mini quiches are puffed and golden in colour.
  • Allow to sit for 5 minutes before removing them from the pan.
