For the ham and cheese mini quiches
- 4 sheets flaky pastry
- 1 egg
- 1/4 cup cream
- 1 teaspoon Dijon mustard
- 1 tablespoon finely chopped parsley
- salt and pepper
- 1 heaped cup grated tasty cheese
- 125g ham, finely chopped
Method
For the ham and cheese mini quiches
- Preheat the oven to 200°C (180°C fan bake). Spray a 12-hole muffin pan with baking spray.
- Using a 6cm cookie cutter, cut circles from the pastry.
- Press the pastry circles into the greased trays.
- In a jug or bowl whisk together the egg, cream, mustard, parsley and some salt and pepper.
- Mix in the cheese and ham.
- Spoon 2 tablespoons of the filling into each pastry shell.
- Bake for 12–15 minutes or until the mini quiches are puffed and golden in colour.
- Allow to sit for 5 minutes before removing them from the pan.
