Ingredients
For the Hamish’s Favourite Meatballs
- 500g beef mince
- 1/4 cup white long-grain rice
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried mixed herbs
- 2 tablespoons tomato sauce
- 1 tablespoon Worcestershire sauce
- 1 onion — diced
- 1 egg — lightly beaten
- Salt & pepper
- 2 tins Italian tomatoes
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- 1/2 cup water
- Parmesan to serve
Method
For the Hamish’s Favourite Meatballs
- Mix together the mince, rice, parsley, mixed herbs,sauces, onion, egg, salt and pepper.
- Roll into around 20 balls.
- Refrigerate the meatballs for 30 minutes or until they firm up for cooking.
- Lightly brown the meatballs in a pan with a small amount of olive oil.
- Add in the Italian tomatoes, balsamic vinegar, brown sugar, water and cook, covered, for 12 minutes.
- Cook, uncovered, for a further 12 minutes or until the rice is tender and the sauce has thickened slightly.
- Top with parmesan to serve.
