For the haystack cookies
- 3 cups rolled oats
- 1 cup shredded coconut
- 120g butter
- 1/2 cup milk
- 1/2 cup cocoa
- 2 cups sugar
Method
For the haystack cookies
- Line 2 baking trays with baking paper.
- In a medium bowl stir together the rolled oats and shredded coconut.
- In a saucepan heat the butter, milk, cocoa and sugar over a medium heat, whisking until everything melts together.
- Simmer for 5 minutes while gently whisking.
- Pour the hot mixture into the rolled oat mixture and stir together.
- Drop tablespoonsful of the mixture onto the prepared trays.
- Leave to set in the fridge.
