Ingredients

For the Hedgehog Slice with Edible Calendula Flowers

  • 125g butter
  • 1 cup icing sugar
  • 3 tablespoons cocoa
  • 3 tablespoons desiccated coconut
  • 1 egg — lightly beaten
  • 250g plain sweet biscuits — broken into pieces

For the Icing

  • 1 cup icing sugar
  • 2 tablespoons cocoa
  • 1–2 tablespoons hot water
  • 12 calendula flowers — stalks removed and washed

Method

For the Hedgehog Slice with Edible Calendula Flowers

  • Melt the butter in a large saucepan. Remove from the heat.
  • Add the icing sugar, cocoa and coconut and mix well.
  • Stir in the egg.
  • Stir over a gentle heat until boiling.
  • Stir in the broken biscuits.
  • Press the mixture into a lined slice tin and refrigerate until set.
  • Make the icing – sift the icing sugar and the cocoa into a bowl.
  • Add the hot water and mix to a smooth paste.
  • Spread the icing over the slice.
  • Place the calendula flowers into the icing.
