Ingredients
For the Hedgehog Slice with Edible Calendula Flowers
- 125g butter
- 1 cup icing sugar
- 3 tablespoons cocoa
- 3 tablespoons desiccated coconut
- 1 egg — lightly beaten
- 250g plain sweet biscuits — broken into pieces
For the Icing
- 1 cup icing sugar
- 2 tablespoons cocoa
- 1–2 tablespoons hot water
- 12 calendula flowers — stalks removed and washed
Method
For the Hedgehog Slice with Edible Calendula Flowers
- Melt the butter in a large saucepan. Remove from the heat.
- Add the icing sugar, cocoa and coconut and mix well.
- Stir in the egg.
- Stir over a gentle heat until boiling.
- Stir in the broken biscuits.
- Press the mixture into a lined slice tin and refrigerate until set.
- Make the icing – sift the icing sugar and the cocoa into a bowl.
- Add the hot water and mix to a smooth paste.
- Spread the icing over the slice.
- Place the calendula flowers into the icing.
