Ingredients
For the Honeycomb
- 1 1/2 cups sugar
- 1/4 cup liquid glucose
- 2 tablespoons golden syrup
- 1/2 cup water
- 2 teaspoons bicarbonate of soda
Method
For the Honeycomb
- Line a baking tray with the paper raised at the sides.
- Place the sugar, liquid glucose, golden syrup and water in a large saucepan over a low heat.
- Cook, stirring, brushing down the sides of the saucepan with a pastry brush dipped in water to remove any sugar crystals, for 5–8 minutes or until the sugar dissolves.
- Increase the heat to high. Bring to the boil. Cook, without stirring, for 5–7 minutes or until the syrup reaches 153°C on a sugar thermometer. Remove from heat.
- Set aside to allow the bubbles to subside.
- Add the bicarbonate of soda and quickly stir with a wooden spoon.
- Pour onto the lined tray and leave to set.
