Hot Chocolate fudge Pudding
- 3/4 cup sugar and 1/2 cup sugar
- 1 cup flour
- 1/4 cup cocoa and 1/4 cup cocoa
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 75g butter - melted
- 1 1/2 teaspoons vanilla extract
- 1/2 cup brown sugar
- 1 1/4 cups hot water
- Ice cream for serving
Method
Hot Chocolate Fudge Pudding
- Preheat oven to 180oC (160oC fan bake). Lightly grease an oven-proof dish.
- Whisk together 3/4 cup sugar, flour, 1/4 cup cocoa, baking powder and salt.
- Pour in the milk, melted b utter and vanilla and mix well. Tip the mixture into the prepared oven-proof dish.
- In a small bowl, whisk together the remaining 1/2 cup sugar, brown sugar and 1/4 cup cocoa.
- Gently spread the sugar mixture over the pudding.
- Pour over the hot water. Do not stir.
- Bake for 30 - 40 minutes or until the middle of the pudding is almost set.
- Take the pudding out of the oven and allow it to sit for 15 minutes before serving with ice cream.
