Ingredients

For the Individual Pavlovas

  • 3 egg whites
  • 1 1/4 cups caster sugar
  • 2 teaspoons cornflour
  • 1 teaspoon vanilla essence
  • 1 teaspoon white vinegar
  • 4 tablespoons boiling water

Method

For the Individual Pavlovas

  • Preheat the oven to 190°C (170°C fan bake).
  • Place all the ingredients in a large mixing bowl.
  • Beat until the mixture is smooth, shiny and stiff, about 12 minutes.
  • Line a baking tray with baking paper and mark 6 x 8cm-diameter circles on the paper.
  • Pile the meringue mixture into the circles.
  • Bake for 5 minutes. Turn the oven off and leave for 1 1/2 hours. Remove and cool.
  • Top with whipped cream (1 cup cream whipped with 1 tablespoon icing sugar) and fresh seasonal fruit.
