Ingredients
For the Italian-style chicken meatballs
- 500g chicken mince
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan
- 2 tablespoons chopped parsley
- 4 cloves garlic, minced
- 1 egg
- salt and freshly ground black pepper
- 3 tablespoons olive oil
- 1 x 400g tin crushed tomatoes (flavoured ones are good)
- 1 1/2 cups grated mozzarella
Method
For the Italian-style chicken meatballs
- Preheat the oven to 190°C (170°C fan bake).
- In a large bowl combine the chicken mince, breadcrumbs, Parmesan, parsley, garlic, egg, and the salt and pepper.
- Mix well, then form into balls.
- In a large frying pan heat the oil over a medium heat.
- Add the meatballs and brown each side, about 5 minutes.
- Transfer the meatballs to a baking dish.
- Top the meatballs with the crushed tomatoes.
- Sprinkle the mozzarella over the meatballs.
- Bake for 30 minutes or until the cheese is golden brown.
