Ingredients

For the Italian-style chicken meatballs

  • 500g chicken mince
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 2 tablespoons chopped parsley
  • 4 cloves garlic, minced
  • 1 egg
  • salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • 1 x 400g tin crushed tomatoes (flavoured ones are good)
  • 1 1/2 cups grated mozzarella

Method

For the Italian-style chicken meatballs

  • Preheat the oven to 190°C (170°C fan bake).
  • In a large bowl combine the chicken mince, breadcrumbs, Parmesan, parsley, garlic, egg, and the salt and pepper.
  • Mix well, then form into balls.
  • In a large frying pan heat the oil over a medium heat.
  • Add the meatballs and brown each side, about 5 minutes.
  • Transfer the meatballs to a baking dish.
  • Top the meatballs with the crushed tomatoes.
  • Sprinkle the mozzarella over the meatballs.
  • Bake for 30 minutes or until the cheese is golden brown.
