Ingredients

For the Long Sausage and Vegetable Roll

  • 350g roll of flaky pastry
  • 450g sausage meat
  • 1 onion — diced
  • 1 carrot — grated
  • 1 medium potato — grated
  • 1/2 cup frozen peas — thawed
  • 2 tablespoons tomato sauce
  • 1/4 teaspoon pepper
  • 1 egg — whisked with 1 tablespoon of water

Method

For the Long Sausage and Vegetable Roll

  • Place baking paper on a baking tray.
  • Unroll the pastry onto the baking tray.
  • Mix together the sausage meat, onion, carrot, potato, peas, tomato sauce and pepper.
  • Spread the meat mixture along the centre of the pastry.
  • Brush each long edge of the pastry with the egg mixture.
  • Roll the pastry around the meat mixture.
  • Insert knife holes along the pastry.
  • Brush the pastry with the egg mixture.
  • Cook at 220°C (200°C fan bake) for 30 minutes or until golden.
