Ingredients
For the Long Sausage and Vegetable Roll
- 350g roll of flaky pastry
- 450g sausage meat
- 1 onion — diced
- 1 carrot — grated
- 1 medium potato — grated
- 1/2 cup frozen peas — thawed
- 2 tablespoons tomato sauce
- 1/4 teaspoon pepper
- 1 egg — whisked with 1 tablespoon of water
Method
For the Long Sausage and Vegetable Roll
- Place baking paper on a baking tray.
- Unroll the pastry onto the baking tray.
- Mix together the sausage meat, onion, carrot, potato, peas, tomato sauce and pepper.
- Spread the meat mixture along the centre of the pastry.
- Brush each long edge of the pastry with the egg mixture.
- Roll the pastry around the meat mixture.
- Insert knife holes along the pastry.
- Brush the pastry with the egg mixture.
- Cook at 220°C (200°C fan bake) for 30 minutes or until golden.
