Noodle Salad

For the noodle salad

  • 200g uncooked spaghetti
  • 4 cups chopped vegetables, e.g. carrot, red and green peppers, cucumber, red onion, spinach, red and green cabbage
  • 1 cup salted peanuts, roughly chopped

For the dressing

  • 1/2 cup olive oil
  • 1/2 cup soy sauce
  • 1/4 cup oyster sauce
  • 1/4 cup rice wine vinegar
  • 1/4 cup brown sugar
  • 3 tablespoons finely chopped fresh ginger
  • 2 tablespoons sesame oil
  • 2 cloves garlic, crushed


For the noodle salad

  • Combine all the dressing ingredients in a large jar. Cover and shake well to mix.
  • Cook the spaghetti according to the packet instructions.
  • While the noodles are still warm, toss them with some of the dressing to stop them sticking together.
  • Combine the noodles with the vegetables and peanuts, then pour over the remaining dressing.
