Ingredients
For the noodle salad
- 200g uncooked spaghetti
- 4 cups chopped vegetables, e.g. carrot, red and green peppers, cucumber, red onion, spinach, red
and green cabbage
- 1 cup salted peanuts, roughly chopped
For the dressing
- 1/2 cup olive oil
- 1/2 cup soy sauce
- 1/4 cup oyster sauce
- 1/4 cup rice wine vinegar
- 1/4 cup brown sugar
- 3 tablespoons finely chopped fresh ginger
- 2 tablespoons sesame oil
- 2 cloves garlic, crushed
Method
For the noodle salad
- Combine all the dressing ingredients in a large jar. Cover and shake well to mix.
- Cook the spaghetti according to the packet instructions.
- While the noodles are still warm, toss them with some of the dressing to stop them sticking
together.
- Combine the noodles with the vegetables and peanuts, then pour over the remaining dressing.
- Choosing a selection results in a full page refresh.
