Rice Bubble Biscuits

  • 125g butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups self-raising flour
  • 1 1/2 cups rice bubbles

Method

Rice Bubble Biscuits

  • Preheat oven to 180oC (170oC fan bake).
  • Line two baking trays with baking paper.
  • Cream the butter and sugar together.
  • Beat in the egg and vanilla extract.
  • Add in the flour and mix.
  • Fold in the rice bubbles.
  • Roll the mixture into balls and place on the prepared trays.
  • Press each b all down lightly with a fork.
  • Bake for 12 - 15 minutes or until golden brown.
