Ingredients
For the Sausage Casserole
- 10 sausages
- 3 tablespoons olive oil
- 2 onions — sliced
- 2 cloves garlic — crushed
- 2 tablespoons tomato paste
- 2 x 400g tins of flavoured tomatoes — whatever flavour you like
- 1/2 cup beef stock
- 2 teaspoons sugar
- 2 tablespoons fresh herbs — rosemary, thyme, parsley
Method
For the Sausage Casserole
- Heat the olive oil in a frying pan over a medium heat. Cook the sausages for around 8 minutes or until golden. Set the sausages aside.
- Cook the onion for around 5 minutes. Add the garlic and tomato paste. Cook for 1 minute.
- Add the tomatoes, stock and sugar. Bring to the boil. Reduce heat to low and simmer for around 10 minutes.
- Add the sausages and herbs. Cook for around 10 minutes or until the sausage is heated through. Season with salt and pepper.
