Ingredients

Sausage Tray Bake

  • 500g pork sausages
  • 2 onions, peeled and cut into large chunks
  • 4 potatoes, washed and cut into large chunks
  • 3 carrots, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • garlic salt and freshly ground black pepper
  • 1/3 cup marmalade or apricot jam

Method

Sausage Tray Bake

  • Preheat oven to 200oC (180oC fan bake). Line a roasting tray with baking paper.
  • In a large bowl, combine the sausages, onions, potatoes and carrots.
  • In a microwave-proof jug, mix the remaining ingredients. Heat until they can be easily combined.
  • Pour the marmalade or jam mixture over the sausages and vegetables and combine well.
  • Tip everything onto the prepared roasting tray.
  • Cook for 45 minutes or until just starting to turn golden.
  • Take out of the oven and turn the sausages and potatoes over.
  • Cook for a further 15 minutes or until everything is golden brown and cooked through.
