Sausage Tray Bake
- 500g pork sausages
- 2 onions, peeled and cut into large chunks
- 4 potatoes, washed and cut into large chunks
- 3 carrots, peeled and cut into chunks
- 2 tablespoons olive oil
- 1 tablespoon dried thyme
- garlic salt and freshly ground black pepper
- 1/3 cup marmalade or apricot jam
Method
Sausage Tray Bake
- Preheat oven to 200oC (180oC fan bake). Line a roasting tray with baking paper.
- In a large bowl, combine the sausages, onions, potatoes and carrots.
- In a microwave-proof jug, mix the remaining ingredients. Heat until they can be easily combined.
- Pour the marmalade or jam mixture over the sausages and vegetables and combine well.
- Tip everything onto the prepared roasting tray.
- Cook for 45 minutes or until just starting to turn golden.
- Take out of the oven and turn the sausages and potatoes over.
- Cook for a further 15 minutes or until everything is golden brown and cooked through.
