Ingredients
For the Super Salad
- 3 cups broccoli florets, chopped into small bits
- 1 apple, cored and diced
- 1 handful baby spinach
- 1/4 cup red onion, diced
- 1 cup cashews, toasted in a dry pan
- 1 cup dried cranberries
For the Dressing
- 1/2 cup mayonnaise
- 1/2 cup sour cream or Greek yoghurt
- 2 tablespoons lemon juice
- 1/4 cup honey, slightly warmed
- 1/4 teaspoon salt
Method
For the Super Salad
- In a large bowl combine all the salad ingredients.
- In a small bowl stir together all the dressing ingredients.
- Add the dressing to the broccoli salad and stir everything together.
